I’m going to be honest with you: I am not a cook. I want to be a cook. I have watched enough cooking content to technically be a cook by osmosis. But I am a mom running a business who has approximately 25 minutes on a good night to figure out dinner — so what I actually am is a strategist.
And strategies, I have.
Whether it’s a regular Tuesday or we’re loading up the car for a weekend trip, I’ve built a rotation of meals, snacks, and pantry staples that keep my family fed without requiring me to be someone I’m not. Here’s all of it.
The Snacks That Don’t Require a Cooler (or a Plan)
The secret to easy snacking with kids is grabbing things that travel well, don’t need refrigeration, and are actually good for you. My non-negotiable grab-and-go list:
🍎 Apples — sturdy, don’t bruise easily, kids eat them without negotiation
🍌 Bananas — the most perfect portable fruit ever invented
🍊 Cuties — individually portioned, peel themselves, basically designed for small humans
🧀 String cheese — protein, no prep, universally accepted by picky eaters everywhere

The Dinners I Actually Make
Rotisserie chicken. I will say it until I run out of breath: this is a lifestyle, not a shortcut. One bird = multiple meals. Shred it for tacos. Slice it for grain bowls. Toss it on a salad. Eat it standing over the counter at 6pm because you forgot to eat. It does everything and asks nothing of you in return.
Sheet pan dinners are my other ride-or-die. One pan, oven, done. Salmon and asparagus and lemon. Chicken thighs and sweet potato and whatever vegetables are about to turn. Twenty-minute prep, thirty minutes in the oven, minimal dishes. This is the hill I live on.
And here’s the thing that elevates all of it: the sauce. A mediocre protein on rice is just fine. A mediocre protein on rice with a great sauce is dinner. These two are always in my fridge:

The Protein Snack Situation
Since focusing on protein — especially post-tirzepatide, where getting enough protein actually matters for maintaining muscle — I’ve built a whole snack system around it. Hard-boiled eggs batch-cooked on Sunday. Greek yogurt. Cottage cheese (yes, I’m in my cottage cheese era, and I’m not embarrassed). String cheese. And always, always, Chomps in the bag.
This is what I eat in the car, between meetings, between school pickup and dinner, between being a mom and being a person. High protein, minimal thought, no prep required.
Turkey roll-ups for the kids: deli turkey, cream cheese, wrap it up. Three minutes. Both kids eat it. It has protein. We move on with our lives. I’ll never apologize for this.
